Cooking with Tallow: A Time-Honoured Tradition
At The Tallow Tribe, we’re proud to offer premium-quality, grass-fed beef tallow sourced from the stunning Adelaide Hills and processed in-house. We start with suet, the fat found around the kidneys and loins of the cow, and use a low and slow method to render it into tallow. This gentle process involves slowly heating the suet to separate the fat from any impurities, preserving its rich nutrient profile and ensuring that the tallow remains smooth, stable, and ideal for high-heat cooking. Here’s why tallow should be your go-to fat in the kitchen and why it’s a better option than seed oils.
What is Tallow?
Tallow is rendered beef fat, typically sourced from around the kidneys and loins (known as suet). Suet is the raw fat from these areas of the cow, and to make tallow, we use a low and slow method of rendering. This involves gently heating the suet over a long period of time, allowing the fat to melt down while separating out any water and impurities. This careful process helps preserve the valuable nutrients, turning the fat into tallow—a smooth, stable fat that is solid at room temperature and perfect for cooking. Unlike seed oils, which are extracted from plants and often heavily processed, tallow is a natural fat that’s packed with essential nutrients and offers a variety of benefits for both cooking and your health.
Benefits of Cooking with Tallow:
-
Stable at High Heat: Tallow has a high smoke point, around 200-215°C, making it perfect for frying, sautéing, roasting, or even deep frying. As a saturated fat, it’s much more stable at high temperatures compared to polyunsaturated seed oils (like canola, sunflower, or soybean oil), which can break down and form harmful compounds when heated.
-
Nutrient-Rich: Tallow is loaded with fat-soluble vitamins such as Vitamin A, D, E, and K. These vitamins are essential for healthy skin, a strong immune system, and good bone health. Tallow also contains conjugated linoleic acid (CLA), a healthy fat with anti-inflammatory properties and other potential health benefits.
-
Supports Healthy Skin: The fatty acids in tallow closely resemble those found in human skin, making it highly nourishing. Tallow contains oleic acid, which helps retain moisture and prevent dryness, making it ideal for skin health. Many of our customers even use tallow for skincare because of its ability to hydrate and soothe the skin naturally.

-
Rich in Saturated Fats: Contrary to what some may believe, saturated fats (like those in tallow) are actually good for your body. They help maintain healthy cell membranes, support brain function, and provide steady energy. Tallow is rich in these fats and can even support heart health when consumed in moderation.
-
Natural and Minimal Processing: At The Tallow Tribe, we pride ourselves on producing tallow that’s minimally processed - simply rendered from grass-fed beef suet and filtered for purity. Seed oils, on the other hand, are often heavily processed using chemicals and high heat, stripping away nutrients and introducing potentially harmful compounds.
Why Choose Tallow Over Seed Oils?
-
Free from Industrial Processing: Seed oils like canola, sunflower, and soybean oil are often extracted using chemical solvents and high heat, which destroys valuable nutrients and introduces unhealthy trans fats. Tallow, however, is a whole food fat with minimal processing, preserving its natural goodness.
-
Lower in Omega-6 Fatty Acids: Seed oils tend to be high in omega-6 fatty acids, which can contribute to inflammation if consumed in excess. The modern Aussie diet is often overloaded with omega-6s, leading to an imbalance with omega-3s. Tallow, however, has a more balanced fat profile and is much lower in omega-6s.
-
Better for High-Temperature Cooking: Tallow is the ideal fat for high-heat cooking. Seed oils, especially those high in polyunsaturated fats, can break down at high temperatures, creating harmful byproducts. Tallow’s stability means it’s safer and healthier for frying, roasting, and sautéing.
-
Rich, Traditional Flavour: Tallow adds a rich, savoury flavour to your food that seed oils simply can’t match. Whether you’re cooking up a juicy steak, frying golden chips, or roasting veggies, tallow enhances the natural flavours and gives your meals that classic, hearty taste.
How to Use Tallow in Cooking:
- Frying: Tallow’s high smoke point makes it perfect for frying everything from crispy chips to tender chicken.
- Roasting: Coat your veggies in melted tallow before roasting for a deliciously crispy, golden finish.
- Sautéing: Use tallow to sauté meats, onions, and garlic for an added layer of flavour.
- Baking: Swap out butter or other oils for tallow in baking to give your pastries a unique texture and savoury twist.
Storing Your Tallow:
Tallow is naturally shelf-stable, making it easy to store. We package our tallow in a glass jar, which helps protect it from contaminants and preserves its quality. For short-term use, you can keep it at room temperature in a cool, dark place like your pantry or cupboard for up to 3-6 months. If you prefer longer storage, refrigerating it will extend its shelf life for up to a year, and freezing it can keep it fresh for 1-2 years. Just be sure to store it in the sealed glass jar to prevent exposure to air and moisture.
